Yes, two days in a row you get to see all of my eats. Exciting stuff, eh? On to my eats from yesterday!
8:00am Breakfast: Green smoothie, hard boiled egg and triscuits.
Yes, yes, I know I just proclaimed my new favorite breakfast but I plan on having my other on the go sandwich tomorrow for breakfast which meant today’s breakfast was a smoothie! This smoothie had spinach (I swear you can’t taste it), soy milk, oats, vanilla protein powder, peanut butter and a frozen banana. I slurped on this baby for a few hours.
12:00pm Lunch: Leftover Mexican Lasagna, clementine
I wolfed this down in about 2 seconds flat (obviously not this portion pictured!) and immediately was disappointed when it was all gone. I still felt like I was starving but decided to let my stomach settle before I grabbed anything else.
1:30pm Snack: Two dates with peanut butter
Dates and peanut butter are one of my top five favorite snacks. They hit all aspects of a great snack (in my opinion). They are:
- healthy & natural
- gives you a boost of energy
- not a calorie bomb
Dinner: Gingery Beef & Vegetables
We rarely buy any other cuts of beef besides the occasional ground beef for no reason other than I think they are complicated to make (when they really aren’t). When I came home from the grocery store last Friday, Ryan spied the sirloin steak and said “What is that for?!?!” Just changin’ up our eats, hun!
To be honest, neither of us really liked this dish which was disappointing. Maybe my spices were off? Maybe I added too much lemon juice? I don’t know but it wasn’t the best. Oh well, tomorrow is another day!
