Mornin’ folks!
How’s the week treating you? Swell I hope. Eats this week have been delicious thanks to the crock pot and freezer. Here’s a peak at my eats yesterday!
Breakfast 8:00am
Can’t get enough of the oatmeal lately. I make my oatmeal with half a cup of water, half a cup of almond milk, cinnamon, vanilla extract, chia seeds, peanut butter and a banana. Perfect fuel to start the day.
Lunch 12:30pm
Most days when I eat oatmeal, I don’t need a morning snack (probably due to the obscene amount of peanut butter I put in it). Today’s lunch consisted of leftover Sweet Potato Chili, homemade beer bread (omg I want this bread all day, every day) and fresh pineapple. I made this batch of chili vegetarian, so essentially just not adding the italian sausage, and to tell you the truth, I didn’t really miss it. This may become a staple for the detox…
Dinner 5:45pm
We don’t normally eat this early, but we had Bible study tonight and needed to scoot out of the door by 6. I had leftover homemade chicken noodle soup from the freezer (but that’s not what’s pictured…forgot!). I whipped this up a couple of weeks ago when Ryan was sick and it made a ton. Great for nights like tonight when we don’t have a lot of time but want something warm and comforting.
And then I ate a bazillion pretzels at Bible study. Oof. Just keepin’ it real here!
Question: Do you like leftovers? I used to hate leftovers (I blame living in a house with 40 other girls during college) but now I’m a huge fan. Anything that makes my life easier is a win in my book!

I was the same way, I hated leftovers! but now that eating leftovers makes life so much easier, I’m fully on board
That chicken soup looks yummy, and yes I was the same way and never ate leftovers…until I started to doing all the cooking and now realize I work too hard to waste good food
