Ah, yes. I remembered to photograph all of my Tuesday eats for you to view. +1 for me.
I will say I’m kind of bored with my eats this week. I’ve tried to stick to our $350 budget for groceries but must confess, I went $25 over! I don’t think it’s reasonable for us to have $350 set for groceries, hygiene products and laundry (yes, we have the coin operated machines…they are as awesome as they sound). We’ll be bumping our budget to $400 and see how that goes.
Anyways, onward to the eats!
Breakfast 8am
Good ole oatmeal eaten at my desk at work. This batch was pretty simple: oats, soy milk (I normally buy almond milk but this was on super sale), cinnamon, vanilla extract, chia seeds, banana, peanut butter. It’s crazy how long oatmeal keeps me full!

Lunch 12:45pm
This doesn’t look to appetizing, does it? It was still scrumptious though! Leftover quiche with roasted cauliflower.
Hard boiled egg and Triscuits. One of my favorite quick and healthy snacks.
Dinner 6:30pm
Ryan is sick and requested chicken noodle soup for dinner. I wish I could say this was homemade but it’s actually from the soup bar at the grocery store. However, I DID make homemade soup once I got home (with homemade stock and everything!) so we now have a huge batch to eat for the rest of the week.
Looking back at the photos made me realize I did not get in as many vegetables as I like to. To be honest, I probably wouldn’t have noticed if I hadn’t taken pictures.
Today is another day though, so I plan to load up on the greens.

Roasted cauliflower is my new favorite thing. I wasn’t that excited to make it, but it was also on super sale, and I loved it! Hope Ryan feels better!
I don’t really like raw cauliflower, but I can get behind roasted!
