Can I just say, I am so thankful I only had to work two days last week. The wedding and honeymoon were finally catching up to me and I needed the weekend in a bad way. Ryan & I were excited to spend a Friday night doing absolutely nothing. I can’t remember the last time we did that and it felt well deserved. Also, the perfect time to crack open the first pumpkin beer of the season.
Oh yes.
And taco night! Though I ended up only taking a photo of the guacamole…guess I forgot how to be a blogger
We kept it easy Saturday morning by waking up at 8 and making egg sandwiches and coffee. Had to drink out of our new coffee mug!
And then I lounged around almost all day. Mainly catching up on blogs over the past two weeks…yes, I’m super cool.
I also went on a run because I’m signed up to do another 5K at the end of September (uhhh yeah…about that) and I’ve done a total of 4 runs since my 5K race. I won’t say it was brutal, but it definitely wasn’t enjoyable.
Though it was a lazy Saturday, I did accomplish meal planning and grocery shopping as well as some IIN work. I’m slowly getting back into the groove of normal life. We ended the evening by watching some Netflix.

Sunday we ended up sleeping until 10 (!!!) which apparently was much needed. This waking up on weekends and having nothing to do is a great feeling to have!
I couldn’t sit still for long though. I ended up uploading 192 photos to Facebook from my bachelorette party, the few photos from the wedding day I have and all of the photobooth photos, which took forever but well worth it. I still have the honeymoon to upload but I think I’m saving that for a different day.
Then I headed to the kitchen to make cookies for Ryan’s co-worker who took care of Murphy while we were gone.
These cookies are not healthy at all but he well deserves them for putting up with the monster for 8 days. I got the recipe from here.
And to prep for roasting a chicken. I used the same method I’ve used in the past. So easy. Don’t be intimidated!
I plan on doing a bit more prep work for meals for the week so I can streamline my cooking time during the week. Here are this week’s meal plan:
Meal Plan September 16-22
- Sunday: Roasted Chicken w/ Sweet Potato Wedges & Kale Chips
- Monday: Sweet Potato Chili
- Tuesday: Leftovers
- Wednesday: Tempeh Stir Fry (first time using tempeh in a stir fry…hopefully it turns out good!)
- Thursday: Spaghetti w/ Italian Sausage & veggie
- Friday: Grill out with burgers & veggies
- Saturday: TBD since we are moving to a new apartment!
And with that, our weekend is over. I’m planning on posting about our honeymoon next week! Still waiting to post about our wedding day once I get the professional pictures.
