Walnut Crusted Salmon

I have a feeling the next 4 weeks will be dedicated to the wedding day. More wedding tasks are taking up our Monday night…and I’m ready for it to be done!

Before the wedding to do (centerpiece project that will take for-ev-er), I headed to the gym for my favorite class, Body Pump. We had a sub instructor and it ended up being my second favorite instructor! He’s the only guy instructor for Body Pump at my gym and he really pushes everyone in the class. His energy is so contagious and he always makes me want to do better. Love it!

After class I sped home to make a quick dinner and get to the project. Taking a break to put up the post and then it’s back to it!

I didn’t have a chance to share this recipe the other day, but man is it good! I’ve made Pecan Crusted Salmon before but we have an overload of walnuts so I traded those in for the pecans. Turned out fantastic!

Walnut Crusted Salmon

  • 4 oz salmon
  • 1/3 cup walnuts
  • 1/4 cup shredded italian cheese (can use Parmesan cheese too)
  • 1 teaspoon dried basil
  • 2 tablespoons olive oil
  • pinch of salt

Preheat oven to 450. Place walnuts, cheese, basil, olive oil and salt in a food processor and pulse until ingredients well combined. Spoon walnut mixture on top of salmon piece. Cover with foil and cook for 12-15 minutes. Uncover the salmon & broil for additional 3-4 minutes.

Love ours covered with chile-lime paste. Or grilled on a cedar plank. But, this looks delicious.

Love this idea! I really love salmon & walnuts, so I’m sure this would be my kind of meal!

My gym has NO male BodyPump instructors… at least not on the normal schedule. That would definitely be a change of pace for me!

It is quite different with a male instructor, but I feel like he pushes me more than any of the women ones.

I love pecan crusted salmon! I haven’t eaten salmon in forever, so this needs to go in my cart the next time I’m at Woodman’s.

That looks so yummy!! We don’t have Body Pump at my gym :( But we have Body Works which I think is similar.
