I got to lunch today wishing I had made more of the Pasta with Kale & Walnut Pesto leftovers. Seriously the most delicious dish I have made in a while. Must make more next time!
I was actually really wishing for leftovers last night when I made dinner and it turned out horribly. I think the chicken was bad, but I didn’t realize it until I had already made the entire dish. It was terrrrrible.
Tonight’s dinner, however, was not terrible. It in fact, was scrumptious.
Salmon BLT Sliders via How Sweet It Is!
It’s pretty much a guarantee that every single one of Jessica’s dishes will make you salivate. I bookmark nearly every one, but I think this may be the first I’ve actually made.
Her recipe used chipotle mayo, but I couldn’t find any adobo sauce or chipotles in adobo sauce (not even at Metro Market for local readers!) so I made spicy mayo with Frank’s hot sauce. A little mayo goes a long way!
Served alongside some sauteed zucchini and red onion.
Anything pairing salmon and bacon in my book gets a gold star!
Question: Do like mayo? I know some people are die hard one way or the other…I’m in between. It’s okay but there can’t be too much or it grosses me out!
