Heighty ho there neighborinos!
How is it already Thursday? I mean, I feel like I’m beating a dead horse by saying this every week but this summer has seriously flown by. I can’t believe in ONE MONTH from today I will be getting married. One last month with my last name and being a “single” lady. I will be someone’s wife
. I feel like I’m not old enough to be someone’s wife. But I’m more than ready to call Ryan my husband.

Ho-kay. Moving on. Dinner tonight according to the meal plan was omelettes. By the end of the work week I need something quick and easy to make and Ryan is THE omlette maker so I gave him this task. I helped cut up some sweet potato wedges since we didn’t have them Tuesday.
The meal plan got a little wonky this week because I realized though the Baked Cod
looked and sounded delicious, it was way too much effort for a Tuesday night. So I made the Spinach & Cheese Quinoa casserole
a day early (so yum, lots of leftovers!) instead. I’ll probably end up making the Baked Cod on a weekend when I have more time.
With that being said, I’m realizing the key to eating healthy and feeling like a normal person for the next busy month, I will need to meal plan quick and easy meals that don’t take a lot of prep. This means partially prepping meals on the weekends as well as easier “throw together in 5 minute meals.” Anyone have any quick and healthy meal suggestions?
I’m rambling today. Back to dinner tonight.
I stuffed my omelette with sauteed zucchini, red onion, goat cheese and mozzarella cheese. I think this was the best set of sweet potato wedges I’ve made. Win.
