Ode To Eggs

If there is one food in this world that I don’t think I could give up, it would probably be eggs.

Ask me this question 4 years ago during college and I probably would have said diet coke or Jimmy Johns, but that’s neither here nor there.
There are so many great things about eggs, I can’t just pick one reason why I love them so much.
For one, they are cheap. Yes, we could get them cheaper (we now buy organic eggs) but still paying $3 per dozen is still only 25 cents an egg. There is no way you could find quality meat that is that cheap.
Three, they are so versatile! You can make an egg sandwich, egg burrito, frittata, quiche, egg scramble (like I did tonight for dinner, see below), egg salad, omelettes…the options are endless.
Scrambled eggs with zucchini, onion and mozzarella cheese. 
Four, which is somewhat already mentioned in number two, but for a few eggs they are a small amount of calories that are more than fulfilling.
Five, you can eat them for breakfast, lunch or dinner (though I prefer dinner) and even snacks! I’m looking at you hard boiled eggs.
So there you have it. A profession of love. An ode to eggs. Here’s to a wonderful life together! :)

I’ve actually never bought organic eggs. We honestly go through them like water. Sometimes Brenton’s dad will bring us farm eggs from one of his coworkers. I would definitely pay more for those!

Oh my goodness I had the best scrambled eggs last night! I just added some pimento cheese and they were fantastic. I went through a period where I could NOT eat eggs… they freaked me out for some reason, but I’ve gotten over that and now eat them pretty frequently.

It’s funny how much I depend on eggs without even realizing it. I’ve always had sort of a love/hate relationship with eggs on their own. When I was doing South Beach diet I always skipped breakfast because you couldn’t pay me to eat eggs without toast. Now I’ll go through spurts of eating them for every meal. And just this morning, when deciding what to have for breakfast, every option I considered involved eggs. Due to a baking marathon last weekend though, I was totally out. Somehow I lasted all week without thinking of them & suddenly today I HAD to have them!
