Got that out of the way? Okay, good. Now let’s talk about some healthy eats.
Healthy eating doesn’t have to take hours and hours in the kitchen. A delicious home cooked meal can be made in 30 minutes or less. Here are a few of my go-to quick, easy, and healthy meals.
1. Walnut Crusted Salmon
We almost always have salmon in our freezer and have it for dinner about once a week. We’ve tried other salmon recipes but walnut or pecan crusted is our favorite.
2. Quiche
Eggs are another popular food in the Lynn household. Sometimes we have them scrambled, other times we have omelets but my favorite way to use eggs is in a quiche. All you do is mix the eggs with whatever add ins you want and voila a scrumptious meal you can have for breakfast, lunch or dinner!
3. Stir Fry
Who doesn’t love a good stir fry? Stir frys are easy when you have random vegetable left in your fridge that are in the use it or lose it stage. Our stir frys are almost never the same, but we love this lentil and brown rice stir fry.
4. Homemade veggie burgers
Even though homemade veggie burgers are somewhat new to me, I’ve fallen in love. I suggest making a bunch over the weekend so you have veggie burgers on hand to eat throughout the week.
5. Sandwiches
I love sandwiches. Like LOOOVE sandwiches. Preferably hot sandwiches. The best thing we registered for? The panini press. Sometimes we do turkey, sometimes we do vegetarian. It really just depends on what’s left in our fridge. They almost always contain hummus and avocado though. Naturally.

Ah, I don’t know why I don’t make quiche more often! Definitely need to remember to put that on my meal plan!

I think I’m going to have to add a quiche to our dinner menu pretty soon! (even though we had a strata last week, which is very similar to a quiche, but without the crust.
What’s the different between strata and frittata?
