My First What I Ate Wednesday

Hellooo! We’ve made it through half the work week, can I get a woo woo? Thankfully, this week has been flying by and I can’t wait until Friday because I’ll be going to Chicago to hang out with a bunch of my college gals, and of course go out for Halloween. I did get to see all of them at the wedding, however I didn’t really get a chance to catch up with everyone (ya know, with the whole wedding thing happening and all).

Anywho! Back to the point of this post. What I Ate Wednesday.

Jenn at Peas & Crayons started What I Ate Wednesday as a way to share a “day in the life” of her eats and it has exploded across the blog land. There is no way I could ever photograph every meal that I eat like some bloggers (not enough patience :) ) so I figured this was a good way to give people a glimpse of what I eat on a regular day.

By the way, these meals are actually what I ate on this Wednesday. I know other people photograph their meals the day before but I have a compulsive need to show you what I actually ate on a Wednesday. #Iamafreak

Breakfast

Baked apple steel cut oats with banana, sunflower butter, and homemade apple butter from Ryan’s mom.

I’ve actually been in a breakfast rut lately. Last week nothing sounded good and I basically forced food down my throat because I knew I would get hungry. I researched around for breakfasts that I could make ahead of time. I wanted to use up some of the apples from the apple picking adventure we went on and used this recipe. I made 8 servings, so I’ve been eating off of it all week!

Lunch

Leftover chicken tortilla soup, gala apple and Justin’s chocolate hazelnut butter.

This soup makes sooo much leftovers it’s ridiculous. I love it. Normally I wouldn’t buy single serving packets of any sort of nut butter (costs too much) but these were on sale at Target and I’ve always wanted to try them. Pretty tasty!

Snack

Forgot to take a picture…rookie mistake. Larabars were also on sale at the grocery store and I just can’t help myself. These are great, healthy snacks that I love to eat about an hour or so before I’m going to the gym.

Dinner

Leftover chicken pot pie, cheddar cheese, and wheat thins.

Excuse the randomness…haha. Ryan made chicken pot pie on Monday and that paired with a lot of chicken tortilla soup…well we have a lot of leftovers to eat before Friday night. Made for a quick meal though!

Well, that wraps up my day of eats! Nothing too exciting but all good, delicious food!

The yummiest (not healthiest!) thing I ate yesterday was a pumpkin pb cup… yum!

I have been in a breakfast rut too. I’ve been eating nothing but oatmeal (at least it fills me up!)
