Memorial Day Weekend 2012

Hello, hello!

I took an unplanned hiatus from blogging over the weekend. Living life > blogging about living life.

Anywho, where did we leave off? Oh yeah, my first cardio kickboxing class. Woof. I was still so sore Saturday. My usual yoga class was canceled so I leisurely got up and had breakfast.

It was rainy for the first part of Saturday, but thankfully it let up so we could take a walk to the Farmer’s Market with Murph. It was his first time there and I was slightly nervous that he would be overwhelmed with all of the people (and other dogs) but he did great! We bought some asparagus, green onion and Great Harvest whole wheat bread. Gosh, I love that bread. Too bad it’s $5 a loaf!

After our trek we hardcore cleaned the house. Well, more like we would clean for about 30 minutes and then watch an episode of Friday Night Lights. Rinse and repeat for about 4 hours.

Sunday we went to church and then headed home quickly to begin cooking for our guests, Alysha and Brenton!

The weather was a bit too hot so a popsicle was a must.

Can you believe after everything we cooked, I didn’t take a picture of ANY of it?! Ha. Well, we had ribs, whole wheat pasta salad, veggies, fruit, spinach and artichoke dip and fruit pizza. So good!

We spent a good chunk of time outside so the Murphy and Oliver could play around. This was their first time meeting and they seemed to like each other!

Maybe sooome day we can get Murph a friend :)

Monday was the ultimate day of laziness. And it was awesome. I finally downloaded some apps to my iPad that I got from IIN, one being the local library app so I could read books for free! I was lucky enough to get the Help (yeah I’m like, so behind on the times) and read that a good part of the day.

With all of the leftover veggies from the weekend I knew I needed to roast some up for dinner.

Roasted sweet potatoes, cauliflower, carrots, broccoli and red onion with a salmon burger/cake.

Roasting veggies are totally the best way to eat them in my opinion!

The best fries in the world!

Salmon burgers made almost exactly the same as last time except made with canned salmon instead of fresh. Just as good!

Well, this post was long winded. Time for me to sign off!

How was your Memorial Day weekend?

I know – we totally should have taken some pics of our spread! BTW, you’ll love the help. I thought the movie was pretty great too.
