Today went by fast! Always thankful for that. I made it to my usual Body Pump class but not before I got in my third run for Week 3 of my 5K training plan. Yes…I was a little late in getting my third run in but I finished it and that’s all that matters, right? Right. Tomorrow starts Week 4. Almost half way through!
After class, I rushed home because we had a delicious dinner planned. Our first salad of the season!
Chicken taco salad, Qdoba style.
Grilled chicken (actually on the grill, love!), spring mix, cucumbers, tomatoes, corn, black beans, green pepper, plain greek yogurt and guacamole.
Seriously just like Qdoba, or Chipotle, whichever you prefer. Except cheaper! All I can say is…I am thiiiiis excited about lunch leftovers tomorrow.
