Crock Pot Chicken, Carrots & Potatoes

Ah, crock pot recipes.

How I love thee.

For whatever reason unbeknownst to me, I always use my crockpot in cycles. I will use it for a recipe, remember how awesome it is, use it for 3-4 more recipes in the same week and declare I will only cook using a crock pot.

And then I forget about it.

I don’t even have the excuse of it being stowed away in some cupboard, because mine sets literally in front of my face in the kitchen. I guess I always assume that crock pot meals require prep work…so not the case!

This was easy peasey lemon squeezy!

First, you get out your crock pot. Obvi.

Next, get out your chicken. We recently purchased a bundle of meat from Bunzel’s in Milwaukee. I love the idea of getting meat from a local butcher! A cut up chicken was one of the items and it fit the bill for this recipe.

If you don’t have a whole cut up chicken, you could easily use a couple of chicken breasts. Anything will work!

Grab your chicken broth next. I recommend using 16-20oz of broth, until the broth barely covers the chicken.

Toss in some carrots (I used maybe 30 baby carrots?) and 3 red potatoes (any type of potato will do!). Sprinkle in some salt and pepper and your meal is complete.

I set mine on high for 3 hour and then low for another 4. If you’re leaving it in all day while at work, I would leave it on the low setting.

I have a feeling the next 3-4 meals will be from a crock pot…

I was just thinking that I need to get my crockpot out again. I love doing chilis/stews…but I need more ideas!

Crockpot meals are the best! I don’t think I can pick one favorite, but I am with Alysha in that chilis are completely delicious. One of my favorite things to use the crockpot for is also boiled peanuts!

I 100% agree! I love my Crockpot :) I used to think it was only good in the fall/winter because of the hardy meals it seems to make, but with it being so hot this summer the Crockpot is working wonders during the summer! I love keeping the oven turned off to advoid heating up the apt. I am actually trying some new recipes my mom gave me! I will let you know if they turn out yummy!
